About Cart: Located right off Highway 97 in Terrebonne and next to the Terrebonne Coffee Wagon, Luna’s Taqueria serves a variety of Mexican food options including breakfast fare — such as their chilaquiles or the Rancho Burrito stuffed with chorizo, egg, cheese, potatoes and pico de gallo — and options including tortas, quesadillas, tostadas, enchiladas and combination plates. The cart is also available to cater events.

Your first order should be: Catalina Nino recommends newcomers try their carnitas, which she said is an original recipe from California. Carnitas, a type of spiced Mexican meat that uses pork shoulder, is traditionally slow cooked in lard, Coca-Cola and oranges and pulled apart in crispy and mouthwatering strands. “They are so delicious,” Nino said. “(They) taste so good.”

Fun fact: Nino said she loves working in Terrebonne and has a lot of fun at their truck — which has been a long-time dream for the chef. “I love food,” Nino said. “I worked for a long time in taco shops and I had a dream to make my own.”
