A new supper club takes root at Camp Sherman

After working as head chef at Camp Sherman’s Lake Creek Lodge newly renovated restaurant last year, Chef Sean Hulecki is fulfilling a dream by purchasing the restaurant with his business partner Chasen Bergstrom and rebranding it as the HØST Supper Club.

Hulecki envisions a menu influenced by the seasons, Bergstrom’s Norwegian heritage and his upbringing in Southern California, where he cut his teeth at Four Seasons Resort in Carlsbad.

“We’re trying to keep everything really local, really fresh,” Hulecki said. “We want to provide something for families and kids, but also the diner that’s looking for a little bit of elevated type style of food.”

The name, HØST, is a nod to the Norwegian word, which directly translates to English as “autumn.”

The branding and logos were designed by Jess Medgett, an artist with whom Hulecki had connections in common through the skateboarding community.

Local partnerships and collaborations

With a grand opening planned for May, Hulecki is in the phase of drafting up a menu and forging relationships with local farmers. In many ways, the menu will mirror the lodge’s menu, which featured a whole trout and a Billy Chinook crawfish ceviche.

“We eat with our eyes first, but also we want to be connected to the land, so I’m trying to paint a picture of that in an artistic kind of way,” Hulecki said.

Hulecki has worked in the fine dining spaces across Central Oregon, from Juniper Preserve (formerly Pronghorn Resort) to Redmond SCP Hotel’s dining concepts, Terra Kitchen, Wayfarer Club and The Rooftop. In 2021, he stepped away from the chef role to launch his own business, Cascadian BBQ Co.

Now, he wants to shake up the fine dining experience. He plans on working with Lazy Z Ranch on a honey mead, as well as hosting wine and beer pairings and inviting chefs to cook ticketed event dinners.

“If you can create a memory with your food, I think that’s the biggest thing. But if you can bring someone back to a memory, whether it’s through comfort food or when you’re a kid or whatever, that’s like the ultimate goal,” Huclecki said.
