Brasada Ranch restaurant names new head chef

Brasada Ranch, the residential resort community east of Redmond, appointed award-winning chef Karl Holl as its new executive head chef.

Holl was named “Chef of the Year” by Portland Monthly in 2018 and has extensive training as a forager, farmer, butcher and chef.

Holl said he eager to cultivate a thoughtful, innovative and memorable dining experience at Brasada Ranch’s numerous venues. He said his natural impulse is to cook as seasonally as possible.

Holl’s journey into the culinary world began in his childhood, cooking alongside his grandmother in small-town Vermont. His career spans several esteemed establishments, including the Michelin-starred Martini House and the iconic Perbacco in San Francisco. He launched Spatzle & Speck, a catering pop-up out of Park Avenue Fine Wines that brought together his love for northern Italian cuisine with fresh farm provisions. Through this venture, he quickly gathered accolades — including Portland Monthly’s enviable title — for his farm-to-table experience that drew upon the Sauvie Island plot he cultivated with his brother Alex. Later he worked as culinary director and developed the menu for the debut of Smith Teamaker’s cafe in Portland’s Alphabet District.

At Brasada Ranch, Holl is kicking off summer with several new dining options, including the Cascade by the Sea, his take on an elevated East Coast “fish shack” at Cascade pool. The menu consists of seafood options from lobster to Oregon bay shrimp and crab, as well as soft serve ice cream. Holl will also layer in local and seasonal ingredients at Range Restaurant & Bar over the summer while he continues to work on its next iteration, officially launching this fall.

Brasada Ranch announced other changes coming to its on-site restaurants led by Holl and newest team member, Daniel Green. The former head baker of Portland’s Submarine Hospitality (Ava Gene’s, Tusk, The Woodsman Tavern), Green will help enhance bread and pizza offerings at the property, including party-cut style pizzas at Ranch House.

Holl now calls Central Oregon home with his wife Jen, their daughter Ruby, and their dogs Coppa and Chance.
