Meat shop and public house open in downtown Redmond

Meat and music are moving into downtown Redmond.
Sisters Meat and Smokehouse and Blacksmith Public House opened next door from one another this month at 308 SW Evergreen.
The butcher shop opened April 5 while Blacksmith Public House has already had its soft opening and celebrated with a public grand opening party on April 21.
Smokehouse owners Annie and Jay Wymer, who are siblings, opened their first location in Sisters eight years ago and decided to expand into Redmond after seeing the downtown property’s location and potential.
The Wymers have hired six people already and hope to hire more to reach full strength.
Open seven days a week, from 9 a.m. to 6 p.m., the smokehouse offers meats ranging from chicken, pork, lamb, beef to elk and fish. They also sell specialty bratwurst and sausage, made in house everyday, as well as smoked cheeses.
“I like to say we’re a small specialty market,” said Annie Wymer. “You can grab everything you need for a quick dinner or going on a hike.”
If brisket isn’t quite your style, head over to Blacksmith Public House for drinks, dessert and live music. Owners Mike and Molly Kosakowski moved to Central Oregon with the goal of opening a tap room.
“I just want the place to be fun, safe, friendly, and different,” said Mike Kosakowski.“This building is specifically designed acoustically for live music.”
The brew pub located in a former blacksmith shop, features vaulted ceilings and honkey-tonk vibe. There is room for 180 people to pack in for a concert, said Kosakowski.
Open seven days a week, the bar is open 11 a.m. to 10 p.m. with the cafe open 7:30 a.m. to 9 p.m. every day.
The Blacksmith serves coffee, mixed alcohol drinks, beers on tap and desserts. It also had a patio-style setting outside where six food trucks will pull up and rotate through the space.
Currently, options include Cascade Alchemy Bowls, That Guy’s Bistro, The Hot Potato, Botanas El Paraiso, The Kilted Kitchen and Homeslice Tavern Style Pizza.
“We have a little bit of everything under one roof,” said Kosakowski.
The Public House has hired 20 people and is still looking for others to fill multiple open positions.
Evelina Davidson, membership and finance director for the Redmond Chamber of Commerce, said the two businesses add “a different flair” to the downtown core and offer more options for fun and entertainment in Redmond.
The Chamber hosted a ribbon cutting for The Blacksmith Public House on April 21, which was followed by an afterparty and live music by The Whiskey Bandits.
